ITALIAN SEAFOOD SALAD

Seafood is plentiful in Italy and each region has its own seafood salad. The dressing needs to be chilled for several hours so prepare in advance.

DRESSING

GARLIC MAYONNAISE

  1. Poach the squid in the water and wine for 20 minutes or until nearly tender.
  2. Add the fish and continue to cook gently for 7-8 minutes or until tender.
  3. Strain, reserving the fish. Pour the stock into a clean pan.
  4. Bring the fish stock to the boil and add the mussels  and clams.
  5. Cover the pan and simmer gently for about 5 minutes or until the shells open.
  6.  Discard any that remain closed.
  7. Drain the shellfish and remove from their shells.
  8. Put  into a bowl with the cooked fish and add the prawns (shrimp) and spring onions (scallions), if using.
  9. For the dressing, whisk together the oil, vinegar, parsley, garlic, salt and pepper to taste.
  10. Pour over the fish, mixing well. Cover and chill for several hours.
  11. Arrange small leaves of radicchio and curly endive on 4 plates and spoon the fish salad into the centre.
  12. Garnish with lemon wedges. Combine all the ingredients for the garlic mayonnaise and serve with the salad.
