ITALIAN GREEN SALAD

Herb-flavoured croutons are topped with peppery rocket (arugula), red chard, green olives and pistachios to make an elegant combination.

  1. Shell the pistachios and roughly chop them, using a sharp knife.
  2. Place 2 tablespoons of the extra virgin olive oil in a frying pan (skillet).
  3. Add the rosemary and garlic and cook for 2 minutes.
  4. Add the slices of bread to the pan and fry for 2-3 minutes on both sides until golden.
  5. Remove the bread from the pan and drain on absorbent kitchen paper.
  6. To make the dressing, mix together the remaining olive oil with the red wine vinegar, mustard and sugar.
  7.  Place a slice of bread on to a serving plate and top with the rocket (arugula) and red chard.
  8. Sprinkle with the olives.
  9. Drizzle the dressing over the top of the salad leaves.
  10. Sprinkle with the chopped pistachios and shredded basil leaves and serve the salad immediately.

COOK'S TIP

If you cannot find red chard, try slicing a tomato into very thin wedges to add a splash of vibrant red colour to the salad.
